Roasted chicken and veggies to the rescue

Whether you're a writer, an accountant, a firefighter, or a stay-at-home parent, you probably have more on your to-do list than will fit on one sheet of paper. A healthy meal is sometimes sacrificed because of a busy lifestyle. That doesn't have to be true, though.

This Roasted Chicken and Veggies recipe is simple and quick. Fifteen minute prep work and fifteen minute cook time creates a healthy, tasty meal.
You can vary the veggies to reflect your preferences.

INGREDIENTS
2 medium chicken breasts chopped into bite-size pieces
1 cup bell pepper (any colors you like)
1/2 onion
1 zucchini
1 cup broccoli florets
1 cup quartered mushrooms
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
DIRECTIONS
Preheat oven to 500 degree F.
Cut all the veggies into large pieces. On another cutting board, cut the chicken into small cubes. Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, and Italian seasoning. Toss to combine.
Bake for 15 minutes or until the veggies are charred and chicken is cooked.
Enjoy with rice, pasta, or a salad if desired.
